Best grown in a neutral, organic, dry to average soil, in full sun. Avoid wet soils as tarragon is prone to root rot. Dividing clumps every 2-3 years helps vitalitiy and production of foliage. Do not prune heavily in late fall.

Tarragon is an herbal flavouring used in seasonal salads, sauces, soups, stews, eggs, meat, fish, mustard and pickles. New growth is harvested to season or flavour vinegar, whereas the mature growth is used for freezing or drying. When harvesting for fresh use, prune off the lighter new growth.
